Ingredients
- 1 medium Sweet Potato
- 2 tbsp Peanut Butter
- 3 tbsp Maple Syrup
- 1/2 cup Oats + 2 tbsp
- 1 1/2 tsp Cocoa Powder
- 3 tbsp Chocolate Chips
Instructions
- Puncture holes in the sweet potato. Microwave on high for 5-6 minutes.
- In a large bowl, mash the sweet potato.
- In a separate bowl, mix together peanut butter, maple syrup, and cocoa powder. When thoroughly mixed, fold in oats.
- Add this mixture to the mashed sweet potato and mix well. Fold in chocolate chips.
- Roll into 12 balls and chill.
