Ingredients
- 2 tbsp Gourmet Garden Fresh Blends Mediterranean
- 3 tbsp olive oil
- 1 cup arugula
- 20 cherry tomatoes halved
- 7 small bocconcini balls or Mozzarella balls, halved
- 1 red onion thinly sliced
- 10 black olives sliced
- 1 cup pine nuts toasted
Instructions
- In a small bowl or jug, whisk together Gourmet Garden Fresh Blends Mediterranean and olive oil.
- In a large salad bowl, combine arugula, cherry tomatoes, bocconcini, red onion and olives.
- Pour dressing over salad and toss to combine.
- Serve topped with pine nuts
