Ingredients
- 3 bell peppers of assorted colours, rinsed
- ½ cup (125ml) marinara sauce or homemade: tomato sauce, olive oil, oregano, and salt & pepper
- ½ cup (125ml) fresh baby spinach rinsed
- ½ cup (125ml) shredded mozzarella cheese
- ¼ cup (60ml) ricotta cheese
- 1 small jar of marinated artichoke hearts or about 8 small heart pieces sliced
- ¼ cup (60ml) of black olives
Instructions
- Preheat the oven to 400° F. Line a 9 x 12 inch baking dish with parchment paper.
- Lay the peppers side down and cut down the middle, creating 2 cups per each pepper. Carefully remove the stem on the top half and place all bell pepper cups on the baking tray parchment.
- Layer with marinara sauce, fresh baby spinach, mozzarella, ricotta, artichoke hearts, and olives.
- Cook for 15-20 mins, or until peppers are cooked through.
