Ingredients

  • 2 kg Ripe Tomatoes Diced
  • 2 tbsp tbsp (30 ml) Olive Oil
  • 3 cloves Garlic minced
  • 2 tbsp (30 ml) Tomato Paste
  • 1 tbsp (15 ml) Sugar
  • ½ tsp (2.5 ml) Dried Oregano
  • ½ tsp (2.5 ml) Dried Parsley
  • ½ tsp (2.5 ml) Salt
  • ¼ tsp (1.2 ml) Red Pepper Flakes or to desired preference
  • 2 tbsp (30 ml) Fresh Basil Minced (more for topping

Instructions

  • In a large-sized pot or Dutch oven heat oil over medium heat.
  • Add minced garlic and stir for 2 minutes or until soft and fragrant.
  • Stir in diced tomatoes and bring to a simmer, stirring often for about 20 minutes or until the tomatoes have broken down.
  • Add the remaining ingredients, stirring occasionally for 10 minutes.
  • Based on the desired texture consider serving as is, mashing with a potato ricer, or pureeing using a food processor or a hand blender.
  • Top with remaining fresh basil.
