Ingredients
- 1 avocado rinsed and skin removed
- ¼ cup (60 mL) fresh dill rinsed
- ¼ cup (60 mL) fresh basil rinsed
- ½ cup (125 mL) fresh parsley rinsed
- 3 tbsp. (45 mL) apple cider vinegar
- 1 tsp. (5 mL) Dijon mustard
- ¼ cup (60 mL) water
- ¼ cup (60 mL) Plain Greek yogurt
- 1/3 cup (80 mL) olive oil
- ½ tsp. (2.5 mL) salt
- Pepper to taste
Instructions
- Place avocado, dill, basil, parsley, vinegar, mustard, water, and yogurt in food processor bowl. Blend to a puree. Drizzle in oil while the mixer is on and blend for a few seconds until smooth.

Tips & Notes
Use whichever fresh herbs you have on hand. For example, cilantro and tarragon could substitute for dill and parsley.
