Green Peas in a BowlWe go together like two peas in a pod!  And that’s why we’ve chosen to feature peas for the month of April.

Peas are very high in Vitamin C and K.  They’re sodium free and a source of fibre!

Peas are easy to grow in the garden and you should start planting now for a great summer crop. If you’re buying them from the grocery store look for firm, bright green, medium sized pods with no signs of decay or wilting.  You can also purchase peas already popped from the pod and frozen for quick convenience.

You can refrigerate peas in a perforated plastic bag for 3 to 5 days. If you buy them fresh, shell them immediately before use.  Boil them for 2 to 3 minutes and don’t add salt since that will toughen them up.  You can also steam them for 1 to 2 minutes.

Peas and Beans Pearl Couscous. This refreshing side dish is perfect to enjoy as a salad or alongside grilled protein. With any leftovers, add tuna or cooked chicken for a new take on a lunch salad.

Chickpea Sweet Potato Stew with Peas and Barley.  This fantastic stew has great warming flavours and spices.

Risotto with Parmesan & Peas from Chef Michael Smith.  This traditional dish is creamy and worth the effort!
