We love to indulge in comfort foods, especially when they’re so easy to lighten up! In Tuesday’s segment on Canada AM, we looked at three delicious ways to add veggies to comfort foods. Our favorite was the eggplant 3 ways. Eggplant is a simple and easy vegetable to work with and can be purchased year-round from your local grocery store. If you’re finding your eggplant a bit bitter, try sprinkling some salt on the sliced pieces, let sit for 10 minutes, then rinse and proceed with the recipe.

Eggplant Bruschetta

You’ll need:

2 medium Eggplant sliced into 1 inch round

1 tbsp olive oil

5 roma Tomatoes diced

1 tbsp balsamic vinegar

4 tbsp olive oilvegetable lasagna

salt and pepper to taste

1 clove Garlic minced

2 Green Onions finely chopped

3 tbsp fresh parsley finely chopped

4 tbsp feta cheese (optional)

Eggplant Lasagna

We’re not going to lie, there are a lot of ingredients in this one, but it is totally worth it. Check it out.

Eggplant pizza

Slice of fried aubergines with tomato sauce, mushrooms, ham andYou’ll need:

2 medium Eggplant sliced into 1 inch rounds

3 tbsp olive oil

1 cup pizza sauce

1 cup Mushrooms sliced

1 cup Onion sliced

1 cup Green Pepper sliced

1/2 cup pepperoni

2 cups mozzarella cheese shredded
