asparaguscampaignSpring has most certainly sprung and with it comes delicious asparagus.  We are featuring this vegetable during the month of May not only because it’s delicious but it’s also in season.

While the most common variety of asparagus is the green one, you can also find white and purple. When you buy your asparagus try looking for ones that have spears in a uniform size.  It will make it easier for cooking because they will all take the same amount of time.  You should keep your asparagus refrigerated and moist by either wrapping them in a damp paper towel or standing them in a jug of water in the fridge.  You can boil them, roast them, grill them, microwave them or even stir fry them!

Six spears of asparagus have only 18 calories, lots of vitamin C, potassium and B vitamins.  Try any of these asparagus recipes at your next meal!
