Ingredients
- 2 kg Ripe Tomatoes Diced
- 2 tbsp tbsp (30 ml) Olive Oil
- 3 cloves Garlic minced
- 2 tbsp (30 ml) Tomato Paste
- 1 tbsp (15 ml) Sugar
- ½ tsp (2.5 ml) Dried Oregano
- ½ tsp (2.5 ml) Dried Parsley
- ½ tsp (2.5 ml) Salt
- ¼ tsp (1.2 ml) Red Pepper Flakes or to desired preference
- 2 tbsp (30 ml) Fresh Basil Minced (more for topping
Instructions
- In a large-sized pot or Dutch oven heat oil over medium heat.
- Add minced garlic and stir for 2 minutes or until soft and fragrant.
- Stir in diced tomatoes and bring to a simmer, stirring often for about 20 minutes or until the tomatoes have broken down.
- Add the remaining ingredients, stirring occasionally for 10 minutes.
- Based on the desired texture consider serving as is, mashing with a potato ricer, or pureeing using a food processor or a hand blender.
- Top with remaining fresh basil.
