Ingredients
Grilled salad:
- 1 Tbsp (15 ml) canola oil
- 2 heads Romaine lettuce halved and divided
- 1 English cucumber cut lengthwise into quarters
- 2 slices stale bread of choice(e.g. whole wheat flatbread, sourdough, etc.)
- 1 cup (250 ml) cherry tomatoes halved
- ½ lemon
- 4 anchovy filets optional
Dressing Ingredients:
- 2 leaves Romaine lettuce
- 1 avocado
- ¼ cup (60 ml) Greek yogurt, plain
- 1/2 lemon juiced
- 1 tbsp (15 ml) Dijon mustard
- Salt and pepper to taste
Garnish:
- 1 avocado sliced
- 1 oz parmesan cheese thinly sliced
Instructions
- Wash all produce under running cool water. Remove 2 leaves from the Romaine lettuce and set aside to be used in the salad dressing.
- Turn your BBQ onto high heat and lightly oil grill. Grill Romaine lettuce, cucumbers, and bread directly on the grill for 1 minute, rotating halfway. In a grill tray/basket, grill tomatoes and lemon half for 1 minute.
- Remove all ingredients from the grill and let cool. Dice the cucumber into large chunks and squeeze the grilled lemon half over the cherry tomatoes.
- Make the crouton crumb: Blend the bread slices and optional anchovies in a food processor or blender and set aside.
- Make the dressing: Blend all salad dressing ingredients in a food processor or blender, until smooth (except salt and pepper). Season with salt and pepper to taste.
- Assemble the salad: Place grilled lettuce on the bottom, followed by the grilled diced cucumbers and tomatoes. Top with avocado dressing, fresh avocado slices, parmesan cheese, and crouton crumb.
